Kitchen Job Description

AKIRA Aptos are looking to add another experienced kitchen Line Cook to our diverse and multi-faceted team of chefs. Nominated best sushi restaurant in Santa Cruz for many years, we strive to provide not just the freshest seafood and sushi but also the best environment to work at. Our diverse staff is what we build our brand and culture from. Our staff members come from many different backgrounds, with different experience and skillsets. Yet all members work together in a very positive and tight-knit environment. We are looking for a Line Cook that is enthusiastic and passionate, yet willing to learn to prepare and cook our style of Japanese-American fusion food, follow and practice our standards of operation, safety and sanitation, and get adapted fast and well into our culture.

Daily Tasks

o Prepare ingredients and components for the day and for back-up

o Set up stove tops, grills, and deep-fryers to make sure the appliances are ready by the time the restaurant opens (at 11:30 AM)

o Handle food and cook food as directed by the Kitchen Lead Cook

o Understand and practice FIFO rule (first in, first out) when it comes to food rotation

o Ensure proper portion sizes, consistency in food quality are met

o Ensure ticket time is on point

o Prepare and follow all checklists

o Communicate effectively with kitchen crews, sushi crews, and service staff during regular and/or busy hours.

o Inform the Kitchen Lead Cook if anything is over-prepped or under-prepped

o Inform the service staff if anything needs to be pushed, or if anything runs out

o Follow all recipes and cooking procedures made for each recipe

o Must be able to give and receive professional feedback/constructive criticisms from the Lead Cook/FOH Manager and Lead Servers, and fellow workers

o Follow directions from management regarding weekly or monthly specials, or any adjustment to menu changes

o Maintain good relations with fellow co-workers in both FOH and BOH departments

o Follow all company policy, safety and security procedures

o Report maintenance needs, accidents, injuries, and unsafe work conditions to the manager

o Must have food handler certification

o Maintain positive working relationships with all members of AKIRA APTOS

Requirements

o Must have an up-to-date food handler certificate

o Ability to stand, walk for a long period of time

o Ability to reach overhead, bend, squat, kneel, and carry products for customer service and inventory restocking

o Ability to lift up to 50 pounds

o Ability to climb up and down ladders, carrying boxes and products

o Ability to use knives, kitchen equipment, and chemicals safely

o Ability to perform maintenance: sweep, mop, empty trash, wash towels, clean kitchen tools

o Must have a flexible schedule to work weekends (including Sundays), lunch and/or dinner shifts, Holidays, and whenever is needed to fill in a shift

o Must be able to work 8-10 hour shifts, and some overtime if asked to
