Experienced Sushi Chef — Core Opening Team
A new concept by the team behind The Shota and SHOJI is seeking experienced Sushi Chefs to join our core opening team.
This concept will focus on an elevated sake driven guest experience paired with a refined, fast paced omakase format, blending efficiency with the precision, hospitality, and attention to detail expected in an upscale environment.
Led by Michelin starred chef Ingi Son, we are building a team of professionals who take pride in every aspect of the craft and guest experience.
We are looking for candidates with a minimum of 10 years of sushi experience who understand that excellence extends far beyond making sushi. Professionalism, consistency, cleanliness, preparation, teamwork, awareness, humility, and hospitality are equally important.
This is not simply a production focused role. We are seeking chefs who can contribute to a high level guest experience while maintaining speed, composure, and precision under pressure.

Expectations & Qualifications
- Minimum 10 years of sushi experience in high level restaurants
- Strong knife skills, fish butchery, rice knowledge, and understanding of technique
- Ability to work cleanly, efficiently, and with urgency while maintaining quality
- Strong sense of hospitality and awareness of guest interaction
- High standards for prep organization, cleanliness, and station maintenance
- Positive attitude and professional communication with both guests and team members
- Ability to think quickly and remain composed in a fast paced environment
- Strong communication and teamwork skills
- Ability to take direction, collaborate closely with ownership, and contribute to a team-oriented culture
- Willingness to learn and grow within the concept without ego or overstepping
- Reliability, consistency, punctuality, and attention to detail in all aspects of service
- Flexible availability including evenings and weekends
- Valid California Food Handler Certification required
